Harvest: Manual, from October to the end of November.
The olives are stored in small ventilated crates and put into work within 24 hours to preserve all their qualities and active ingredients.
Extraction: at controlled temperature according to the cold method and not filtered.

Color: green with reflection of gold / yellow.
Scent: olive bouquet and delicate herbaceous tone
Aromas: fruity - large residual aromatic palette
Recommended tasting: for raw vegetables and salads, broths, soups, fish but also any type of meat ... or simply with a little salt and bread!
